This dish is basic comfort food. By basic, I mean basic. You may want to take it up a notch by adding frozen peas and carrots in with the chicken. Serve this dish with a tossed green salad. Serves 4 Ingredients 1 3/4 cups plus 1 tablespoon all-purpose flour 5 to 6 eggs Milk 1 teaspoon salt Pepper to taste 2 1/2 pounds chicken, cut into pieces (or use breast strips) 3/4 cup of sour cream Directions Preheat the oven to 375 degrees F. Grease a large 9 x 11" baking dish. Make the Batter... Combine 1 3/4 cups of the flour, eggs, and milk to create a batter resembling that of a thick pancake batter. Add 1 teaspoon of salt, mix well and pour into the greased baking dish. Add the Chicken... Salt and pepper the chicken pieces and arrange throughout the batter in the baking dish. Bake for about 40 to 50 minutes until golden. Remove from heat. Finish the Dish... Mix the sour cream with 1 tablespoon of flour and pour/spread it over the chicken dish. Return the baking dish to the oven for 5 to 10 minutes.

I am definitely trying this! That imaginary person at the beginning of your post? Totally me. I work four ten-hour days so I can have 3-day weekends to work on my blog, and by the time I walk in the door at the end of a work day I can hardly think straight, let alone make a time-consuming recipe. This kind of dinner is just what I need!
